- Oven thermometers are inexpensive and worth buying — most domestic ovens are off by 25°F or more.
- Fan-assisted (convection) ovens cook about 25°F hotter than conventional ovens. Reduce the recipe temperature by 25°F or Gas Mark 1 when using a convection setting.
